Instructions
  1. Place the almonds, hazelnuts & Super Seed Snack in the food processor and pulse until they look like grains.
  2. Add the mixed fruit,medjool dates and coconut oil until they are chopped and mixed
  3. Then add in the rest of the ingredients and pulse until it is all incorporated or the mixture starts to clump together.
  4. Spoon out tablespoon size chunks of the mixture and roll into balls. Place the balls in the freezer for around 1 hour.
For the Frosting
  1. Soak the cashews for at least 3 hours then drain and place in the food processor with the other ingredients. Pulse until smooth (usually about 6 minutes). Then spoon drizzle over the energy balls and place the cranberries & mint leaves on top.
  2. When the balls are finished you can serve immediately or pop them in an air tight container in the fridge.
