Ingredients
- 225g Oats
- 1pinch Baking Soda
- 1pinch Salt
- 40g Sugar free milk chocolate
- 3tbsp Rapeseed Oil
- 6tbsp Whole Milk
- 4tbsp Honey
- 2Packet Good4U Mint & Cocoa Energy Balls
- 1tub Ice Creamwe chose Breyers low calorie, high protein vanilla ice cream
Instructions
- Preheat oven to 200°C.
- Mix together the oats, baking soda and salt. Blitz in a food processor until it looks like flour.
- Add in the oil, milk and honey and combine to form a dough.
- Blitz the energy balls into small pieces. Add the chopped up chocolate to the dough.
- Mould the cookies into balls and then flatten down.
- Place onto a lined baking tray and bake until its nearly golden. Take them out slightly early as they will continue to cook for a minute or two.
- Cut your ice cream slices large enough for the cookies.
- Serve the cookies hot or cold, layered with ice cream and sprinklings of the chopped mint bites with one cookie as the base and one on top.
