In a large pot, mix together the onion, ground cumin, turmeric, paprika and cinnamon, quinoa and dried fruit
Once the quinoa begins to pop, add the 2 cups of stock and allow to cook for 10 minutes
Before cooking the scallops, coat them with olive oil and season with salt and pepper
Place the scallops onto a hot pan and cook for 3 minutes on each side
Serve the quinoa in a dish and garnish with lemon juice, spring onion and Good4U Super Sprouts, Good4U Quinoa Sprout Mix & Good4U Sunflower Seed Sprinkles
Mix all the ingredients together, place the scallops on top of the quinoa and enjoy
