Instructions
- Preheat the oven to 180 degrees
- Place chopped vegetables into oven for 15-18 minutes until softened
- Boil water and cook quinoa for 18-20 minutes or until the quinoa has softened and has absorbed all of the water
- In the meantime make the avocado dressing by blending the avocado, coconut milk and lemon juice together until smooth. Chill until serving
- Serve the quinoa and roasted vegetables in a bowl and top with the avocado dressing and Good4U Sprout Mixes
