Instructions
  1. Slow roast sweet potato in the oven until soft (roughly 30 mins) - allow to cool.
  2. Place the mixed leaves, sweet potato, beetroot and feta cheese into a large salad bowl and toss
  3. Sprinkle in the Lentil Sprout Mix and Salad Super Seeds and drizzle with olive oil
  4. Enjoy!
