Healthy Pumpkin Pancakes
Recipe developed by our in house Nutritionist Sarah-Jayne. This simple but tasty recipe is a great idea for breakfast or as a delicious dessert.

- In a small bowl beat the eggs. Add in pumpkin puree and mix well
- Add in the coconut flour and mix until all ingredients are combined
- Heat a non-stick pan over medium-high heat. Lightly grease the pan with a ¼ tsp of coconut oil
- Pour half of the batter on the pan for one pancake
- Cook until surface of pancakes have some bubbles and sides of the pancake firm up, about 2 minutes. Carefully flip the pancakes with a spatula, and cook the underside
- Transfer the pancakes to a warm plate, drizzle with maple syrup and add a sprinkle of Good4U Super Seeds
