When you’re finished carving, don’t even dream of throwing away the pulp and seeds. There’s a lot more to pumpkins than carving scary faces!

Pumpkin is a nutrient dense food, meaning it is jam-packed with vitamins and minerals while being low in calories. It’s vibrant orange colouring comes from its beta carotene content, a powerful antioxidant which helps fight potential oxidative stress to our cells and in turn, possibly playing a role in preventing cancer. Beta Carotene is converted into Vitamin A in the body, an essential Vitamin for promoting our eye health while also helping to maintain healthy glowing skin. Pumpkin is also chock-full with Vitamin C, vital this time of the year to boost our immune system and help keep colds and flus at bay.

The seeds also have many nutritional benefits as they are rich in Protein, Healthy Fats, Zinc and Magnesium. Protein is essential for growth and repair within the body, while Healthy Fats such as Monounsaturated Fats and Omega 3 Fatty Acids help maintain a healthy heart and prevent inflammation. Zinc plays many important roles in the body including immune support, maintenance of healthy hair skin and nails, while also aiding our sleep and boosting our mood. Zinc may also help protect against prostate cancer with research findings suggesting a link between zinc and the suppression of prostate cancer cell growth. Magnesium is another important mineral for our health as it is involved in energy production, muscle contraction, bone formation and also aiding our sleep.

Besides the abundance of vitamins and minerals, pumpkin is a rich source of dietary fibre which is great for those looking to lose weight. Fibre increases satiety, helping you feel fuller for longer, without over indulging. Fibre also promotes good digestive health, helping to prevent constipation.
