Christmas 'Pudding' Energy Balls
These 'pudding' balls are so easy to make and will be perfect to take along to a party or to have at home Christmas day – I’m sure everyone will be pleased to have at least one healthy snack in between overindulging in the usual Christmas treats!

Instructions
- Place the almonds, hazelnuts & Super Seed Snack in the food processor and pulse until they look like grains.
- Add the mixed fruit,medjool dates and coconut oil until they are chopped and mixed
- Then add in the rest of the ingredients and pulse until it is all incorporated or the mixture starts to clump together.
- Spoon out tablespoon size chunks of the mixture and roll into balls. Place the balls in the freezer for around 1 hour.
For the Frosting
- Soak the cashews for at least 3 hours then drain and place in the food processor with the other ingredients. Pulse until smooth (usually about 6 minutes). Then spoon drizzle over the energy balls and place the cranberries & mint leaves on top.
- When the balls are finished you can serve immediately or pop them in an air tight container in the fridge.
