Curried Butternut Squash Soup

Instructions
- On a low heat, melt the butter in a big deep pot
- Add the spice if you like and then the chopped onion, allow to soften
- Add chopped carrot and celery and coat in the butter
- Add chopped butternut squash and allow to soften for 3 or 4 minutes
- Make 1 litre of stock and add to pot
- Cover and allow to simmer for 15 or 20 minutes until the veg is cooked through
- Blend to your preferred consistency and season to taste (lots of black pepper is lovely in this soup)
- If it is too thick, you can add water after blended to thin it a little
- Top with a swirl of yoghurt and some Good4U Salad Super Seeds and Lentil Sprout Mix to add nutrition and crunchy goodness
