Ingredients
225gOats
1pinchSalt
4tbspHoney
1tubIce Creamwe chose Breyers low calorie, high protein vanilla ice cream
Instructions
  1. Preheat oven to 200°C.
  2. Mix together the oats, baking soda and salt. Blitz in a food processor until it looks like flour.
  3. Add in the oil, milk and honey and combine to form a dough.
  4. Blitz the energy balls into small pieces. Add the chopped up chocolate to the dough.
  5. Mould the cookies into balls and then flatten down.
  6. Place onto a lined baking tray and bake until its nearly golden. Take them out slightly early as they will continue to cook for a minute or two.
  7. Cut your ice cream slices large enough for the cookies.
  8. Serve the cookies hot or cold, layered with ice cream and sprinklings of the chopped mint bites with one cookie as the base and one on top.
