Moroccan Sweet Potato & Chickpea Curry

Instructions
- With a pan nice and hot, add the cumin, olive oil and onion and fry it a little bit
- Then add your green and red pepper, garlic, ginger, turmeric, paprika and garam masala
- Leave to fry and add the sweet potato
- Now add the sugar, just to help it to caramelise and then the tomato puree
- Cook it for a minute and then put in the chopped tomatoes, coconut milk and chickpeas
- Leave to simmer on a low heat for 5 minutes to infuse the flavour
- Remove from the heat and add a handful of chopped mint and coriander and finish it with a handful of Lentil Sprout Mix & Super Sprouts
